easy no bake cheesecake recipe


Last week I had a sudden craving for homemade cheesecake, something my mum and I used to make all the time back in the day! I made these easy no bake Nutella & lemon and ginger cheesecakes last week - they were such a hit with my boyfriend, I thought I'd make them again and share the recipe with you! Minimal ingredients needed, easy to adapt, no baking necessary, and they taste pretty darn good too.

To make four mini cheesecakes - two Nutella & two lemon and ginger. What you'll need: 
six chocolate biscuits (I went for Digestives, but Hob Nobs work amazingly well, too!)
300g of cream cheese
a knob of butter
a heaped teaspoon of Nutella
 half a lemon
half a teaspoon of sugar
 a pinch of finely grated fresh ginger
four mini bowls - I use my trusty Gu Puds jars!


To make the base...
1. Crush up your chocolate biscuits in a bowl - doesn't matter if some bits are chunkier than others!
2. Melt a knob of butter, then gradually mix into the crushed biscuits.
3. Fill your four mini bowls with the crushed biscuit base.
4. Pop the mini bowls in the freezer for 15 mins to cool down.

Next up...
5. Fill two mixing bowls with 150g of cream cheese in each .
6. In one bowl, mix in a heaped teaspoon of Nutella in with the cream cheese.
7. In another, add the juice of half a lemon, a pinch of finely grated fresh ginger,
and half a teaspoon of sugar into the cream cheese.
8. Take your jars out of the freezer and fill with your cream cheese mixes.
9. Pop in the fridge for an hour or two, and then they are ready to eat.
10. Lick the bowls, of course!
